Culinary tour of Spain:
See, feel and taste the remarkable Spain.

This extraordinary program is for the traveler with a serious interest in the culinary traditions and innovations of Spain. We offer participants the opportunity to see, feel and taste the remarkable flavors of three delightfully distinct regions: Catalunya, the Basque Country and Castilla y Leon. Throughout, you'll be treated to a hands-on experience your palate simply won't believe. Not only will you partake of some of the finest wine and cuisine the country has to offer, you'll also be meeting with a few of Spain's most celebrated chefs, winemakers and market artisans. From professional wine-tasting courses to avant-garde cooking demonstrations, we'll make sure your mind is as sweetly stimulated as your senses. Our hope is that, along with wonderful memories, you'll bring back the ability to conjure up a bit of Spain at home, whenever inspiration strikes.


We'll begin our journey in Barcelona, the cosmopolitan epicenter of the Catalunyan culinary scene. In addition to dining in some of the city's most extraordinary establishments, we'll also visit the Penedés wine region. The highlights of our stay in Barcelona will include classes in the kitchens of the famed Escuela Hoffman and a guided hands-on visit of La Boquería, praised by professionals as Europe's most spectacular market. We'll meet merchants, sample produce and begin to understand the Catalunyan approach to cuisine.


As we head into the Basque country, the regional culinary differences will mirror the cultural and linguistic ones. We'll spend three nights in the elegant seaside resort town of San Sebastian where we will taste its traditional cuisine enjoying a “pintxos” meal and its modern cuisine having dinner at one of the most prestigious restaurants in the country such as Mugaritz (Chef Andoni Aduriz) or Arzak (Chef Juan Mari Arzak). In Bilbao we will visit the Guggenheim Museum designed by the famous American architect Frank Gehry. Of course, we'll also make sure to take time to savor San Sebastian's gorgeous beaches and sophisticated boutiques.


In the Ribera del Duero, a stunning valley in the heart of Castilla-Leon, we'll be guests of Don Oscar Hernando Torrego, owner and head chef of the prestigious Restaurante Maracaibo and one of only handful of master Chefs in Spain to have formal training as Somelier. Don Oscar will prepare us for a tour of the Ribera del Duero wine region, leading us on an introductory tasting of Ribera del Duero wines. Once in Segovia Don Oscar will guide our hearts, hands and palates trough the cuisine of his hometown. We will delight in preparing Cochinillo (roast suckling piglet), lamb dishes, wild mushrooms a la Segoviana as well as typical desserts.


We will end our journey in Salamanca learning how to cook paella and to make sangria enjoying a special farewell dinner.

Sample Day-by-Day Itinerary:

Day 1: Depart USA to Barcelona
Board your flight for the start of your journey to Barcelona, with complimentary meals and beverages served on board.

Day 2: Arrive Barcelona
Upon arrival, your guide will greet/meet you at Barcelona International Airport and you will be transferred to your hotel in Barcelona. In the afternoon/evening we will visit the city of Barcelona, which is known as the city that vibrates with life. The city has long had the reputation of being the avant-garde capital of Spain, especially in design and architecture. It holds some of the most superb museums, including the world class Museum of Art of Calaunya, and individual art museums dedicated to Picasso, Joan Miro and Tapies. As well, has outstanding Gothic and modernism architecture, most perfectly and eccentrically expressed in the work of Antonio Gaudi: Sagrada Famili Bailica, La Pedrera, Park Güell, etc. The majority sites of historic interest are located in the old town, known as Barrio Gotico: Ramblas street, Picasso Museum, Saint James Square, Gothic Cathedral, Santa Maria del Mar Basilica, etc. We must not forget the new area of the city: Montjuic, where the Olympic stadium and the Spanish Village are situated. This mainly panoramic sightseeing tour includes a visit to the Sagrada Familia Basilica. After the visit we will enjoy a “tapas” dinner in Cuines Santa Caterina restaurant. Cuines Santa Caterina is not a regular restaurant; it is a total integrated space in the Santa Caterine’s Fresh Market where its open kitchen and its fresh foodstuffs will lead us to a casual ambience and peculiar taste. Overnight in Barcelona.


Day 3: Barcelona
After breakfast, served at our hotel, we will start our cooking experience in Barcelona with a visit to the Boqueria Market, touted as Europe’s finest collection of produce vendors in a single market, is an explosion of life and color sprinkled with delicious little bar-restaurants. One of the chefs of Hofmann Cooking School will lead us in our exploration of the market. After the visit we will attend a cooking demonstration at Hofmann Culinary Art School. Few years ago, Mey Hofmann decided to dedicate herself completely to the culinary arts. She felt encouraged by both the need she felt to share the experiences gained during her career as a chef and from what she learned in the best kitchens and schools around Europe. From her necessity became the idea to open a school in Barcelona. Creating and recreating dishes where all the flavors, essences and aromas of fresh ingredients are conserved, recovering apparently simple foods, sidelined by fashion and returning them to the status they should never have lost are fundamental parts of Hofmann School activity. After the cooking demonstration we will enjoy a tasting menu lunch at Hofmann Restaurant (One star Michelin). The rest of the day will be at leisure. Overnight in Barcelona.

Day 4: Barcelona - Penedés - Barcelona
After breakfast, served at our hotel, we will travel a few miles South to the Penedes region. The influence of the sun and the Mediterranean sea make the Penedes a privileged territory for winemaking. Long considered one of best wine-producing regions in Spain, it is also one of the most ancient agricultural areas in Europe. Perhaps better-known for its Cava production (sparkling wine), white grape varieties predominate, it is also a region that produces some highly-regarded oak-aged reds. In Villafranca del Penedes, capital of the Penedes region, a special visit to Bodegas Miguel Torres, founded in 1870, and we will enjoy a wine tasting. After the visit we will have lunch at Mass Rabell Restaurant (owned by Bodegas Miguel Torres). Return to Barcelona. In the evening, we will have the opportunity to walk through the gardens of Park Güell. Overnight in Barcelona.


Day 5: Barcelona - Pamplona - San Sebastian
Breakfast will be served at your hotel. This morning we will journey towards the Basque Country. On our way to San Sebastian we will make stop in the city of Pamplona to amble through the streets where the running of the bulls explodes every July during the festival of San Fermin. We will have the opportunity to enjoy the local cuisine at Baserri Restaurant. Opened in 1963 in the same space than the former Café Irañeta (one of the cafes frequented by Ernest Hemmingway), it is nowadays one of the gastronomic models of Navarra region, famous for its “pintxos”. After lunch we will visit the city of Pamplona, the first main city on the route of Saint James (Camino de Santiago). Pamplona has a beautiful medieval city center where we will be able to discover some of the most impressive monuments/buildings of the North of Spain like the Cathedral with the fragile grace and gabled Gothic arches of its cloister, the 18th-century town hall, the former 16th-century pilgrims hospital, the impressive citadel and the Plaza del Castillo, surrounded by a warren of small streets which are filled with restaurants, taverns and bars. This evening travel to San Sebastian for overnight.


Day 6: San Sebastian
Breakfast will be served at your hotel. In the morning we will participate in a tour of San Sebastian with a local guide. San Sebastian is a bright an elegant beach town arched around one of the finest urban strands in the world, La Concha (The Shell), named for its almost perfect resemblance to the shape of a scallop shell. The best way to visit the city is to walk around and that is how we are going to discover its most incredible sites. The famous sculpture by Eduardo Chillida at the foot of the Igueldo mountain, El Peine del Viento (The Comb of the Wind) will show us the beauty of San Sebastian and from the Ondarreta beach will start our tour: Miramar Palace, Saint Mary of the Chorus Basilica, Victoria Eugenia Theater, Constitution Square, La Bretxa Market, The Cathedral of the Good Shepherd, Kursal Palace, City Hall, Maria Cristina Bridge, etc. We will end our tour at the Gros district where we will enjoy a delicious lunch at Bergara Restaurant, winner of the first “pintxos” contest of the Basque Gastronomic Association and most recently, awarded with the prize to the best “pintxos” selection of the Basque Country. After lunch we will have some free time for resting, shopping or enjoying San Sebastian gorgeous beaches. In the evening we will attend a cooking demonstration at Akelarre (3 star Michelin). Akelarre is situated on the far side of Monte Igueldo with incredible views over the Atlantic Ocean. Chef Pedro Subijana is one of the most spectacularly experimental chefs in Spain and he was awarded the Spanish National Prize for Gastronomy in recognition of his contribution to Basque cuisine. After an amazing cooking demonstration we will enjoy a beautiful tasting menu dinner, a perfect gastronomic experience and an exquisite ritual of the service that goes with it. Overnight in San Sebastian.

Day 7: San Sebastián – Bilbao – San Sebastián
After breakfast served at our hotel, we will depart towards the city of Bilbao. Bilbao, a former industrial giant, has been transformed, in less than a decade, into leading cultural pole thanks to the incredible impact of the Guggenheim Museum. After the opening of the Guggenheim Museum (built by Frank O. Gehry) in 1997, this sprawling city has experienced a cultural renaissance fuelled by a stream of visitors. Cutting-edge hotels, state-of-the-art transport, public sculptures and the most internationally-reendowed architects (Casar Pelli, Santiago Calatrava, Arata Isozaki, Ricadro Legorreta, Pedro Arrupe, Sir Norman Foster, Zaha Hadid and Frank Gehry) have all been drawn into the dynamic Bilbao net. In the morning we will do a walking tour of Bilbao from the neoclassical Plaza Nueva to the Gothic Cathedral and a baroque stoke exchange. In the afternoon we will enjoy a nice lunch in one of Bilbao’s famous restaurants. After lunch we will do a guided tour of the Guggenheim Museum. The Museum is seamlessly integrated into the urban context, unfolding its interconnecting shapes of stone, glass and titanium along the Nervion River. The largest of its nineteen galleries, house Richard Serra’s monumental installation “The Matter of Time”. Overnight in San Sebastian.


Day 8: San Sebastián – La Horra (Ribera del Duero) – Salamanca
Breakfast will be served at our hotel. This morning we will depart towards the Ribera del Duero wine area. The region is characterized by a largely flat, rocky terrain and it is dedicated almost entirely to the production of red wine from the Tempranillo grape. Wine has been produced in this area for thousands of years but viticulture, as we know, it probably arrived in the Ribera de Duero region with Benedictine monks from Cluny in the Burgundy region of France in the 12th-century. Ribera del Duero was named wine region of the year 2012 by the prestigious Wine Enthusiast Magazine. Today we will enjoy a gastronomic experience at Viña Sastre. Our hosts, Jesus Sastre (General Manager) and Oscar Hernando (chef and somelier) will lead us on this spectacular experience. We will visit the wine cellar, do a wine tasting and enjoy a Castilian lunch based on roast lamb. The philosophy of Viña Sastre is clear, create a limited production of wine with unlimited care. Caring for the sake of caring. The pampering and care of each vine, the traditional methods and the latest technological advances combine to make this winery stand out in the world of wine. After lunch, continuation of the journey towards Salamanca. Overnight in Salamanca.


Day 9: Salamanca – Segovia – Salamanca
After breakfast, we will depart towards the city of Segovia, where D. Oscar Hernando will be waiting for us at his restaurant to lead us on a cooking demonstration of the Castilian cuisine. After the cooking demonstration we will enjoy a tasting menu. In the evening we will visit the city of Segovia. Segovia is a relatively small city, strategically sited on a rock ridge, it is deeply and haughtily Castilian, with a display of squares and mansions from its days of Golden age grandeur, when it was a royal resort and a base for the Cortes (parliament). It was in Segovia where the Isabel la Católica was proclaimed queen of Castilla. We will find a huge number of impressive monuments and buildings inside its medieval walls: the Roman aqueduct, probably built around the end of the first century BC and over 800 m long, supported by 166 arches and 120 pillars, stands up without a drop of mortar or cement; the cathedral, the last major Gothic building in Spain; the Alcázar, an extraordinary fantasy of castle, with its narrow towers and flurry of turrets; the Vera Cruz church, built by the Templar Knights; the synagogue, very similar in style to Santa María la Blanca in Toledo; and many Romanesque churches as San Millán, San Justo, San Martín, etc. Overnight in Salamanca.


Day 10: Salamanca
Breakfast will be served at our hotel. In the morning , we will enjoy a walking tour of the city. Salamanca is the most graceful city in Spain. For four centuries it was the seat of one of the most prestigious universities in the world and, despite losing this reputation in the XVII Century, it has kept the unmistakable atmosphere of a seat of learning. It is a small place, and it is given a gorgeous harmony by the golden sandstone from which almost the entire city seems to be constructed. The city’s architectural sights seem endless: two cathedrals, one Gothic, the other Romanesque, vie for attention with Renaissance palaces and gems of Plateresque decoration. The Plaza Mayor is the finest in Spain; and the surviving university buildings are tremendous throughout, all of them

distinguished by the same warm stone. Today we will visit this impressive and beautiful city: The grand Plaza Mayor is the hub of Salmantine life, the vast Baroque church of La Clerecía, the Casa de las Conchas (House of Shells), named after the rows of carved scallop shells symbol of the pilgrimage to Santiago which decorate its façade, the University, the cathedrals, the Roman Bridge, the Art Nouveau and Art Deco Museum, Convento de las Dueñas, Monasterio de San Esteban, Torre del Clavero, San Marcos and San Martin churches, etc. In the evening we will learn how to cook paella and to make sangria followed by a special farewell dinner. Overnight in Salamanca.


Day 11: Salamanca – Madrid Airport – USA
After breakfast , we’ll bid each other a warm “hasta luego” and transfer to Madrid airport for our return flight home.
